3-alarm smoked chili pepper salsa

this weekend i decided to take the modest bounty of red jalapeño chilis and make salsa. i only had a handful, so i supplemented my harvest of jalapeño and poblano with more from the farmer’s market, adding some half-red anaheims. then i swung by my friend’s house to pick up some habañeros to throw in too. i smoked 11 of them so i could return 6 to him for another salsa project, but i used 5.

i read up on smoking peppers and found that it’s a simple process of adding hardwood chips to coals at about 200 degrees. i had to do mine by sight, but they got a good smoking for a few hours on the grill. i separated amar’s chilis and got to work slicing and seeding the roasted peppers. i reserved the seeds in the event that the salsa needed more heat, but once i got to cooking i found that 5 habañeros was more than enough for my tolerance.

many recipes for chipotle salsa call for tomato paste, but i was determined to make everything from scratch, so i used 2 jars of tomatoes i canned last summer, and simmered them with a chopped onion and minced garlic until they reduced sufficiently. i also chose to blend it to the above consistency, but you could certainly keep it chunky if that’s you’re preference.

i took a close-up of the jar to show the particulates. there’s a lot of roasty goodness in there. the finished product is the consistency of tomato sauce, but you could thin it down with cider vinegar for more of a pepper sauce, which i might try with some of it, because it’s so spicy! i composed this recipe myself, feel free to use it as a base for interpretation.

3-alarm smoked chili pepper salsa
ingredients:
10 medium red jalapeños
2 medium poblanos
2 medium red anaheims
5 medium habañeros
1 medium onion
2 cloves garlic, minced
2 cloves garlic, crushed
16 oz crushed tomatoes
2 tbs olive oil
4 tbs white balsamic, white wine, or cider vinegar
2 tbs balsamic vinegar
2 tbs sugar
1 tsp salt

equipment:
charcoal briquettes
hickory chips
charcoal BBQ grill
rubber gloves

light your charcoal briquettes in your BBQ. while they light and come to temperature, and soak hickory chips in a bowl of water about 20 minutes. when the briquettes are lit, spread them out, sprinkle some hickory chips over them and put your grill in place.

put your selection of chili peppers on the grill, turning as needed as they char on all sides. add hickory chips as needed and cover the grill so the smoke flavor can infuse into the chilis. they are ready when all sides are charred and they appear partly wilted and cooked through. [mine took a couple hours.]

while the chilis are smoking, add the olive oil to a saucepan and simmer the chopped onion on medium heat until translucent. add the minced garlic and simmer 5 minutes more. add the crush tomatoes and simmer uncovered until reduced and thickened [i did mine 30 minutes].

when the chilis are ready, take them to the kitchen and put on your rubber gloves [hot chili pepper oil is an irritant and should not come in contact with your skin in this quantity]. slice each pepper lengthwise, cut the stem off around the top and scrape the seeds with the blade of your knife into a bowl. you can reserve the seeds to add if you’d like to increase the heat later.

allow your tomato sauce to cool or work in small batches. puree the tomato mixture with the roasted peppers, balsamic vinegar, remaining wine/cider vinegar, crushed garlic, sugar and salt. taste and adjust seasoning to your preference.

LAUSD linked learnig summer institute

i’ve been working with the LA area chamber’s pillar program to link up with LA area high schools with graphic design programs, providing the perspective of a working designer for curriculum enhancement. most recently this took the form of the LAUSD linked learning summer institute with canoga park high school. several schools from LAUSD were present, and after a morning presentation, we split off into groups by school and worked on curriculum development.

the group of teachers included instructors in digital art & yearbook, drawing, printing, photography and english. they were a really great group of educators who have been working hard to improve school programs within tight budgets. i was really impressed with the curriculum they already offer. it’s so much more developed than anything my high school offered to potential designers, and while some of this is the natural evolution of education multiplied by the accessibility of the internet, some of it is old-fashioned care and attention being paid to our profession.

the focus of the consult was supposed to be about how i could help advise on real-world scenarios and help direct curriculum to address these things in the classroom before the students become employed. interestingly, though, we got into a discussion about the current perception of the school and how it’s not where they’d like it to be in order to attract students who want to participate in the design program. it had all the makings of a branding conversation, so i said it sounds like canoga park high needs a brand makeover! and they agreed.

we decided to start talking about it as a possible project for the design program to tackle. what i love about these teachers is that they were full of questions and had great ideas about implementation. one of them asked “if we were to conduct a rebrand project, how would you suggest we do it?” we went through having the students brainstorm on all their perceptions about the school, good, bad & ugly, and refining their thoughts to core ideas.

we talked about conducting an informal market research campaign where they could interview their parents, neighbors & local business owners on perception of the school and analyze it. we talked about developing a brief going forward and having students propose projects they’d like to do to support it [photo essays, psa poster campaigns, identity exploration, mood boards, poetry in a typography-only layout, etc.]. we talked about having kids in 3 different classes group up [a designer, an illustrator and a copywriter] to work to produce projects as creative teams. we talked about environmental and experience design—what’s it like to walk into the attendance office to get an absence slip, what about that experience is a reflection of the school? whether these things actually get redesigned or just remain projects isn’t important, but the process of identifying parts of a system and how to improve them is.

what i love about it the most, is that it serves multiple purposes. the students will be building amazing portfolios, the school will have attention to its image paid from the inside out, and the educators will have no shortage of artifact to send along with grand proposals to show the level of work they’re doing.

of course, it doesn’t stop there. one of the biggest challenges with a diverse group of students is relative levels of exposure to design. i’m sending over resources the educators can use to present all different types of design to the students, as well as offering to come in and talk about portfolio development and help give the students a good idea of what they’re in for with a career in design. i really hope they find a way to work up to the school rebrand project, it’s a big thing to organize, but it would turn out some really exciting work.

i haven’t put anything up on wine in awhile, but i just came across this great list of 90 point wines for under $15. go to town! her list starts at 85 points, but it’s a great collection of wine ratings, especially if you’re tasting something new.

so, i tried this once before and somehow gave up after awhile, but i decided to give it a try again: the no shampoo alternative, wherein you wash your hair with baking soda, and rinse with a mix of lemon juice and apple cider vinegar. i think i’ve found the balance my hair likes after about a week [i tend to need more baking soda, less vinegar]. i’m really happy with the results too, my hair stays cleaner longer, and holds a curl without any product as well. there are so many benefits to doing this, but i can’t decide which one i like best among what i’m eliminating: chemicals from my skin, pollutants from the water supply, packaging from the recycling system & financial dependence on a convenience product i can make myself. i forgot my camera today, but i’ll post some pics soon.
